  1. Put the water on to boil. While waiting for it to boil start prepping the sauce by first melting the butter in a saucepan. Then add the flour and salt. Stir until smooth. Add the brown sugar and stir to combine. Cook over a medium heat, stirring constantly, until mixture bubbles and is lightly browned (about 5 minutes). Remove from heat. Add in boiling water and stir to fully incorporate. Return saucepan to heat and bring to a boil. Stir constantly until thickened and has a smooth texture.
Recipe Notes

This can be made ahead of time then just warmed up just before you are going to serve. When warming it up, I like to add a little rum into the sauce to give it that wee kick. (usually a couple of tbsp)

I quizzed mum as to where this recipe came from and she wasn’t sure but thought it came from an old recipe book that one of the flour companies put out.
