My Favourite Cookie

!One of my earliest food memories is this cookie. Gramma was not a great cook…except for these cookies. I always associate this cookie with going to visit Gamma. Makes me smile every time i bite into one

Cookie
  1. Mix flour, oatmeal, brown sugar, white sugar and salt. Blend in butter with a pastry blender or hands. Add vanilla and baking soda in the hot water. Roll to 1/8 inch thick and cut with a round cookie cutter (the bun). Bake on a greased cookie sheet for 8 minutes in a 350 F oven. When cool spread the date filling on one cookie (the hamburger), then press a second cookie on top
Date Filling
  1. Cut up the dates and cook with water until dates are soft and mixture has thickened. Let cool and create the Hamburger Cookie
